AMISH PASTE, USA. Heirloom variety originally from Wisconsin but discovered in Pennsylvania, in the heart of Amish country, dating back to the 1870s. Introduced in the 1987 Seed Savers Exchange Yearbook. While this variety is fairly good fresh, it truly excels in sauces and pastes. The foliage is not very dense, so be cautious of sunscald in hot climates. Mid-season, high-yielding variety with tall, vigorous plants.
The fruits are orange-red, elongated plum-shaped. The blossom end has a shallow indentation with a weak attachment. The fruits are bright red, meaty, and juicy, with an excellent balanced flavor — not overly sweet nor acidic, but rich and full of tomato essence. The plums are very firm, resistant to cracking and leaking, though somewhat tough in texture. The flesh is red, juicy, and sweet, with few seeds.
Despite its name, it is not a paste-type tomato in the classical sense, as the flesh is too juicy. Many consider it an ideal variety for juice, paste, and canning.
