Flesh is light green, transparent, with pink streaks; the gel is emerald.

A variety from Indiana, bred and developed by Alan Bishop, it was named for the color of its flesh resembling the famous spirit. Developed from a cross of Emeraude, Aunt Ruby's German Green, and Brandywine. Large round fruits, slightly flattened and ribbed at the top. Green marbled skin with dark green veining. The top develops a pink veil when fully ripe.

Last year, I didn’t get a chance to taste it. I had only one bush, and since I planted it late, the tomatoes didn’t appear until the end of August. They hung there green for a while, then started turning pink. I thought it might have been a mislabeled variety or cross-pollination, so I tossed them into the general harvest pile—after that, their fate was unknown.

This year, I finally got to try Absinthe. The fruits are exactly the same color as the first time. In terms of ripening time, it’s mid-early. Productive, not watery like many green varieties, and delicious with a hint of sweetness.

I’ve become a real Absinthe lover, thanks to your seeds - much appreciated. These tomatoes are both delicious and beautiful. I've never had green ones quite like these before, especially with those pink streaks :) . Yield-wise, they didn't perform spectacularly for me - not all fruits set properly. Then again, it wasn't a great tomato summer overall.

Overall, I liked this variety. The yield in the greenhouse was excellent, so much so that the vines broke the ties several times! The flavor was also great: nice and sweet. The only downside is that it doesn’t store well and softens too quickly.

I really loved this one! From now on, I'll make sure to squeeze in at least one bush of this variety in my plantings. The tomato didn't produce heavily, but every single fruit on the plant turned out huge - around 500-600 grams each. I grew it in the greenhouse, trained with two main stems.
