BIANCA. A mid-season, high-yielding Italian eggplant variety, also known as Bianca Sfumata di Rosa. Its most distinctive feature is its large, round or oval-round fruits with a delicate, unusual coloring: pale pink with white, smoky, or lilac tones. The fruits are eye-catching and typically weigh 500 g to 1 kg, sometimes growing even larger under favorable conditions. The period from emergence to fruit maturity is approximately 120–125 days. The plants are vigorous, reaching about 80–90 cm in height, and are suitable for growing outdoors or in plastic-covered greenhouses.
The fruits are usually 12–14 cm in diameter, with a rounded-oval shape and soft pink-lavender skin. The flesh is white, firm, and resilient, with a delicate, non-bitter flavor. Variety descriptions sometimes note a subtle mushroom-like flavor. Bianca is valued for its generous yield and large, attractive fruits. The eggplants are ideal for baking, frying, stewing, and preparing a wide range of home-cooked dishes.
