WHITE JALAPEÑO (JALAPEÑO WHITE / JALAPEÑO GUERO). A variety of hot jalapeño pepper with an unusual creamy-white fruit color at the technical maturity stage. This is a rare and striking variation of the classic Mexican pepper that retains the traditional flavor and moderate heat but looks completely different. Thanks to its coloration, this variety immediately stands out among other jalapeños and is considered one of the most decorative in this group. The variety originates from Mexico, the city of Jalapa. Its second name is Jalapeño Guero. The heat level ranges from 2,500 to 8,000 SHU on the Scoville scale, which corresponds to the classic jalapeño level.
In Spanish, the word "guero" is often used to describe fair-haired people or to denote a light, yellowish-cream shade. This name perfectly reflects the characteristic color of the fruits. The variety is mid-season, distinguished by a long fruiting period. The bush is compact, 50-70 cm tall, sturdy, and practically requires no staking or pruning, making it convenient to grow both in open ground and in greenhouses. The plant produces a stable and abundant yield. The fruits are of the classic conical shape characteristic of jalapeños, 5-8 cm long and weighing 12-15 g.
VARIETY FEATURES
The surface is smooth and neat. The wall thickness is 2-3 mm, the flesh is juicy and crisp. The main feature of the variety is its color. At technical maturity, the fruits are white with a creamy tint, then gradually turn more yellow, later become orange, and at full biological maturity acquire a rich red color. The pepper can be consumed already at the white stage — it is especially juicy and slightly sweet then, with a characteristic crunchy effect. The flavor is peppery, aromatic, with a good balance of sweetness and pungency.
Upon full ripening, the skin becomes slightly denser, and the heat becomes more noticeable. The pepper is suitable for fresh consumption, making sauces, pickling, and drying. Thanks to its unusual color, it looks impressive in salads, appetizers, and home preserves. White Jalapeño is a combination of traditional Mexican flavor and a rare decorative appearance, valued both by gourmets and collectors of unusual varieties.
